Yet every vintage is different. That&#8217;s the magic of Champagne!  <\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-f5308786fe8c4504ddd59d050d058d2b\"><strong>Spring<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Vegetation is starting to cycle again, and the stakes are high: the quality of the spring (vineyard work, weather, etc.) is a guarantee of the harvest to come. Winegrowers are constantly on the lookout for ways to maintain the vines on a daily basis. Tying, disbudding, lifting, trellising &#8211; there&#8217;s no shortage of work to be done in the vineyard!  <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-b9eefeb7f00d7a39639d25ec884d8468\"><strong>Summer<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">The vines remain at the heart of the concerns of winegrowers, who continue to pamper them every day. This is the time for trimming, also known as &#8220;summer pruning&#8221;. The weather also plays its part, more or less favorable depending on the year.  <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-853925bebdce881c6906707399c40dc8\"><strong>Autumn<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s time for hand-picking, even if this now tends to take place in summer, often in September or late August. Observation of the vines indicates the best time to harvest the grapes. Each harvest is different from the last in terms of grape maturity, acidity and alcohol content. All the players in the Champagne region are mobilized for this crucial stage in the viticultural cycle.   <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-097da3f8537b722ac6d3c312ccd1d427\"><strong>Winter<\/strong><\/h3>\n\n\n\n<p class=\"patterns-underline wp-block-paragraph\">After the harvest, the vine loses its leaves, leaving the field free for vine maintenance. The vine &#8220;sleeps&#8221; for a few months. The sap falls back into the roots. This is called &#8220;dormancy&#8221;.     <\/p>\n<\/div>\n<\/div>\n<\/section>\n\n<section class=\"wp-block-group alignfull pattern-text-50-media-50 has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns are-vertically-aligned-center is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"334\" height=\"217\" src=\"https:\/\/tourisme-en-champagne.com\/assets\/uploads\/2025\/07\/taille.jpg\" alt=\"\" class=\"wp-image-12825\" title=\"\"><\/figure>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<p class=\"wp-block-paragraph\">Early January is the ideal time for pruning, according to the 4 types* required by Champagne regulations.<\/p>\n\n\n\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link has-base-color has-grey-background-color has-text-color has-background has-link-color wp-element-button\" href=\"https:\/\/tourisme-en-champagne.com\/en\/all-about-champagne\/champagne-making\/\">CHAMPAGNE PRODUCTION<\/a><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/section>\n\n<section class=\"wp-block-group alignfull pattern-text-50-media-50 has-middleground-background-color has-background has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns are-vertically-aligned-center is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong><strong>Champagne grape varieties<\/strong><\/strong><\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-grey-color has-alpha-channel-opacity has-grey-background-color has-background\" \/>\n\n\n\n<p class=\"wp-block-paragraph\">The nature of the terroir has guided the selection of the best-suited grape varieties.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Today, three grape varieties are in the majority: Pinot noir, Meunier and Chardonnay.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Older varieties (Arbane, Petit Meslier, Pinot Blanc and Pinot Gris) are also authorized, but remain anecdotal in terms of the proportion of vineyards planted.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"390\" height=\"213\" src=\"https:\/\/tourisme-en-champagne.com\/assets\/uploads\/2025\/07\/cepages.gif\" alt=\"\" class=\"wp-image-12810\" title=\"\"><\/figure>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><em>L&#8217;Arbane, Petit Meslier, Pinot Blanc and Pinot Gris account for less than 0.3% of the vineyard. Pinot Gris and Pinot Blanc emerged from mutations of Pinot Noir. Petit Meslier is a cross between Gouais and Savagnin. Finally, Arbane is a grape variety whose origin remains a mystery to this day.  <\/em><\/p>\n<\/div>\n<\/div>\n<\/section>\n\n<section class=\"wp-block-group alignfull pattern-text-100 has-base-background-color has-background has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Champagne cuv\u00e9es<\/strong><\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-accent-1-color has-alpha-channel-opacity has-accent-1-background-color has-background\" \/>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-2f50f294b53f0ac427fa2f180fdfe988\">Each winemaker, each House, produces its own cuv\u00e9es to create its own range of champagnes.<\/h3>\n\n\n\n<p class=\"patterns-underline wp-block-paragraph\">The name of a cuv\u00e9e comes from its blend (the different wines that make it up) and\/or its dosage (the sugar content).<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>The brut &#8220;non-mill\u00e9sim\u00e9&#8221;<\/strong> is a blend of several years. It is a champagne classic, representative of the House&#8217;s style. A non-mill\u00e9sim\u00e9 can be blended in different proportions.  <\/li>\n\n\n\n<li><strong>Vintage <\/strong>wines are made exclusively from the same vintage. We choose to vintage a wine when the harvest was exceptional, which gives it great character. <\/li>\n\n\n\n<li>This original, full-bodied <strong>ros\u00e9 <\/strong>is made by maceration of black grapes (ros\u00e9 de saign\u00e9e) or by blending still, non-sparkling red wine from Champagne (ros\u00e9 d&#8217;assemblage). It is the only French wine that can be made using this technique. <\/li>\n\n\n\n<li><strong>The Cuv\u00e9e Sp\u00e9ciale, vintage<\/strong> or not, is composed of the most subtle wines. It is an exceptional cuv\u00e9e that contributes to the prestige of a House and reveals its savoir-faire.   <\/li>\n<\/ul>\n\n\n\n<p class=\"patterns-underline wp-block-paragraph\"><em>The term &#8220;cuv\u00e9e&#8221; initially refers to the first juices extracted during pressing at harvest time (i.e. 20.50 hl from a 4000 kg marc). These very pure juices produce wines of great finesse, with subtle aromas. <\/em><\/p>\n<\/div>\n<\/div>\n<\/section>\n\n<section class=\"wp-block-group alignfull pattern-text-50-media-50 has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns are-vertically-aligned-center is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"390\" height=\"299\" src=\"https:\/\/tourisme-en-champagne.com\/assets\/uploads\/2025\/07\/flacons-0.jpg\" alt=\"\" class=\"wp-image-12820\" title=\"\"><\/figure>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong><strong>The different bottles of Champagne<\/strong><\/strong><\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-grey-color has-alpha-channel-opacity has-grey-background-color has-background\" \/>\n\n\n\n<section class=\"wp-block-group alignfull pattern-citation has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\" style=\"padding-top:var(--wp--preset--spacing--xx-large);padding-bottom:var(--wp--preset--spacing--xx-large)\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-fdcf44e1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\"><em>&#8220;The bottle doesn&#8217;t matter, as long as you get drunk.<\/em><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Alfred de Musset&#8217;s words are as elegant as ever, but the fact remains that alcohol is a pleasure to be consumed in moderation!<\/p>\n<\/div>\n<\/div>\n<\/section>\n<\/div>\n<\/div>\n<\/section>\n\n<section class=\"wp-block-group alignfull pattern-text-100 has-middleground-background-color has-background has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-63fbf5b9 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Champagne tasting<\/strong><\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-accent-1-color has-alpha-channel-opacity has-accent-1-background-color has-background\" \/>\n\n\n\n<p class=\"patterns-underline wp-block-paragraph\"><strong>5 tips for serving champagne like a pro<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-1b08b3686f1a84929e915350f8269566\"><strong># 1 &#8211; Serve champagne at the right temperature<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">That means cool, at 8 or 9\u00b0C. However, some cuv\u00e9es, such as old vintages and special cuv\u00e9es, are best served around 10 or even 12\u00b0C. Ideally, 2\/3 of the bottle should be immersed in an ice bucket for 20 minutes. Failing that, chill your bottle in the least cold part of your fridge to preserve the wine&#8217;s qualities for drinking. Avoid the freezer at all costs!    <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-324240a9d1693fc834812e41d612d71c\"><strong># 2 &#8211; Open the bottle correctly<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">To open the bottle, tilt it slightly and release the loop on the wirehood. Then remove the wirehood and liner, holding the cork with your thumb and the bottle upright. Then, still holding the cork firmly, grasp the body of the bottle and turn it to gently release the cork from the neck without letting it escape. Normally, you should hear a delicate &#8220;pschitt&#8221; rather than the famous &#8220;pop&#8221;! Finally, remember to taste the champagne before serving.      <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-66cea3678c3b016bf7961aab88e072ac\"><strong># 3 &#8211; Serve champagne in clean glasses<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Washed in hot water. In dishwasher-washed glass, the bubbles don&#8217;t open as they should. It&#8217;s best to wash the glass in hot water, without any detergent, and leave it to dry. To avoid traces of limescale, you can wash it in hot water with a little white vinegar.   <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-fda7c473c31367c061ecfac013297244\"><strong># 4 &#8211; Serve champagne in appropriate glasses<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">In other words, in a flute. It&#8217;s best to enjoy champagne in tulip-shaped glasses with a large container (20 to 30 cl) to give the bubbles room to develop and allow the aromas to express themselves. <\/p>\n\n\n\n<h3 class=\"wp-block-heading has-accent-1-color has-text-color has-link-color wp-elements-197951b21ea0923b7312a97de9fb0e7b\"><strong># 5 &#8211; Serve champagne with style<\/strong><\/h3>\n\n\n\n<p class=\"patterns-underline wp-block-paragraph\">Hold the bottle by the base, not the neck. The ceremonial of serving champagne is just as important as the champagne itself. The bottle should be held with one hand by the base, which has a conical cavity called the piq\u00fbre.
